Why this isn't your regular weekly list

Meal prep doesn't change how much you eat, it changes when you cook. That changes what's worth buying: what's great straight off the stove is rarely what's still good on day four.

That's why this list has chicken thighs instead of breast, brown rice instead of white, and squash instead of salad greens. Breast dries out on reheat, white rice turns to paste, and leafy greens don't survive a container. Every choice here is made for Thursday, not Sunday.

How this becomes five meals

The trick is cooking three bases and combining them, not five separate dishes. From this list: a big onion-carrot-tomato base, a tray of lemon roast chicken, and a pot of lentils.

  • Base + ground beef = bolognese, and the filling for a quick bake.
  • Base + chickpeas + spinach = stew hot, grain bowl cold with feta.
  • Chicken + brown rice + blanched broccoli = the classic bowl, done well.
  • Roasted squash + stock = soup, which freezes better than anything else here.
  • Eggs: Friday's safety net, when the containers are empty.

What to double and what to leave alone

Double the base, the lentils and the soup without hesitation. They keep, they freeze, and they lose nothing — this is where meal prep actually pays.

Does this work for one person?
It's where meal prep pays off most, since cooking daily for one wastes the most time. Halve the meat and freeze half of each base in single portions.
